Pumpkin Bars (made with Cake Mix)
An easy way to prepare a Pumpkin Treat! Tasty and creamy like pumpkin pie — But it can be served in smaller pieces and ‘bites’. I generally add candied ginger to the Topping. I often mix in a bit (1/4 cup) of Mascarpone Cheese with the filling.
Serve as simple ‘bites’ — Or as a more serious dessert, topped with whipped cream…. Enjoy!!
Ingredients / Prep:
1 Pkg Yellow Cake Mix — Divided
1/4 cup Brown Sugar
Optional: 2 – 3 tbsp. Candied Ginger – Finely chopped
1/4 cup Butter (half stick)
Crust & Filling:
1/2 cup Butter (whole stick)
1 can Pumpkin
2/3 cup Evaporated Milk
2-1/2 tbsp. Pumpkin Pie Spice
1/2 cup Sugar
Instructions / Assembly:
Topping — Measure out 1 cup Cake Mix into mixing bowl (set aside remainder). Mix in Brown Sugar and chopped Ginger. Cut 1/4 cup Butter into pieces and cut in with Cake Mix/Brown Sugar — Till pea-sized crumbs form. Set in refrigerator to keep cool.
Crust — Melt 1/2 cup Butter, allow to cool. Once cooled, beat in 1 Egg; mix in bowl with Cake Mix (minus 1 cup). Stir till blended (mixture will be thick and pasty) — Press into bottom of ungreased 9 x 13-inch cake pan; set aside.
Filling — Whisk together remaining 2 Eggs with the Evaporated Milk. Separately, mix together Pumpkin, White Sugar, Pie Spices. Mix all together — Pour Filling over Crust. Remove prepared Topping from refrigerator. Sprinkle over Filling; Topping will blend together will baking. Bake in 350 oven — 45 minutes.
