Late Summer Pizza — with Smoked Salmon, Shiitake, Apple and Corn

I developed this Pizza after a trip to the Minnesota North Shore, where I always pick up some wonderful Smoked Salmon.  An amazing combination of flavors — Everything works well together; satisfying and balanced.  One key is using tasty, moist Smoked Salmon.  You can certainly make your own Crust — Or simply use something already prepared, like Naan.

For TWO Naan Pizzas….

Ingredients / Prep:

2 Naan (Indian FlatBread)
4 – 6 tbsp. soft Chevre/Goat Cheese
1 tbsp. Olive Oil
Smoked Salmon — Broken into bite-size chunks
1/2 tart Apple — Peeled, sliced thin
Shiitake Mushroom — Sliced
Corn Kernals (fresh or frozen)
Fontina Cheese — Grated

Also — Fresh Lemon, Butter

Instructions / Assembly:

Mix together Chevre and Olive Oil to a paste — Set aside.

In saute skillet, over medium heat, add a bit of Olive Oil — Saute (gently) Shiitake slices, just till cooked.  I always add a squeeze of fresh Lemon Juice.  Transfer to dish; set aside.  In same skillet, add small amount Butter — Saute Apple Slices, just till slightly cooked.  Transfer to dish; set aside.

Prepare Pizzas — Place Naan on baking sheet.  Spread Chevre lightly onto each Naan; add a few Apple slices; add Salmon bits.  Add Shiitake slices; add sprinkle of Corn Kernals.  Finally, top with sprinkle of grated Fontina.

Bake in 400 degree oven — About 10 minutes.
