Lemon / Cream Cheese Bites:
Easy/Easy — Made with Lemon Cake Mix. And I’ve even added chopped Rhubarb (finely chopped, mixed in with the Cream Cheese mixture) for extra tartness.
1 8-oz. package Cream Cheese, softened
1/3 cup Sugar
2 tsp. lemon juice **
Optional — 1-1/2 cup rhubarb (finely chopped)
Beat Cream Cheese till creamy. Add 1 Egg, Sugar, Lemon Juice — Beat till smooth. Set aside (in fridge). If adding chopped Rhubarb, mix in at this point. **And use only ONE teaspoon lemon juice.
1 package (15-1/4 ounce) lemon cake mix
1/3 cup vegetable oil
Instructions / Assembly:
Prepare Pan — Butter, parchment, butter. Oven at 350.
In large bowl, lightly beat Oil and 1 Egg; mix in Cake Mix, beat till crumbly. Reserve 3/4 cup Cake Mixture for Topping — Set aside (in fridge).
Press remaining Cake Mixture into prepared baking dish. Bake for 10 – 12 minutes till lightly browned.
Remove from oven — Pour Cream Cheese Mixture over baked crust; spread as evenly as possible. Sprinkle with reserved 3/4 cup Cake Mixture. Bake for 20 – 22 minutes, till lightly browned. Let cool a bit, then cover and chill. Cut into bars.
