Curried Chicken Bites


Curried Chicken Bites (Kabobs):

A truly easy (yogurt) marinade for cut up chicken.  Versatile — Can either roast/bake in the oven, or pop onto skewers for grilling.  Additional yogurt mixture can be used to prepare an easy Sauce for serving.

Ingredients / Prep:

4-6 cloves of Garlic — Peeled, finely chopped
2 tsp. Curry Powder
1 tsp. each — Cumin Seed, Cardamom Powder
1 or 1-1/2 cups plain Greek Yogurt
1 teaspoon Kosher Salt
1/4 cup Olive Oil
2 whole skinless Chicken Breasts (4 halves) — Cut into ‘bites’ (not too small)
Lemon Juice (freshly squeezed)
Cilantro (for garnish)

Instructions / Assembly:

Mix Marinade — Garlic, curry powder, cumin and cardamom, yogurt, salt, and olive oil in a medium bowl. Mix in chicken bites till fully coated.  Cover and refrigerate at least 4 hours or up to overnight.

For Oven Roasting/Baking:  Preheat oven to 400F.  Cover large baking sheet (with sides) with parchment.  Place chicken pieces all over, not touching each other.  Bake for about 15 minutes till toasty/golden.  Depending on size of bites, chicken should be fully cooked but still tender.

For Grilling:  Soak skewers in water ahead of time.

When ready, add chicken bites only double skewers.  Can add vegies — Cut up red or yellow pepper, or zucchini.  Chill until grill is ready.

Heat grill to medium hot — Place skewers on grate (NOT directly over heat), cover. Check cooking at 10 minutes, or again at 15 minutes.  Remove from grill when toasty/golden and fully cooked.


Transfer chicken to a serving platter.  Add a squeeze of fresh Lemon Juice, garnish with chopped Cilantro.
