Chocolate Stacks with Spiced Dulce de Leche Cream

Chocolate Stacks with Spiced Dulce de Leche Cream:

This lovely (spiced) Dulce de Leche is easy to make — And when mixed into whipped cream, the possibilities are endless.  Use as a filling for various cakes, or cake roll, or easy Brownie/Cookie Stacks.

Spiced Dulce de Leche

1 14-oz. can sweetened condensed Milk
1/2 tsp. Cinnamon
1/2 tsp. Cardomom

Preheat oven to 425 F.  Mix Milk with Spices — Pour into a shallow baking dish. Cover snugly with foil.

Set baking dish in a larger pan — Add hot water till it reaches halfway up the side of the baking dish. Bake for 1 to 1-1/4 hours — Check a few times during baking, add more water to larger pan as necessary.

Once Dulce de Leche is nicely browned and caramelized, remove from oven and let cool. Once cool, whisk till smooth. Store in tight container in refrigerator till ready to serve. Mix with Whipped Cream (below) or warm gently before using.

Chocolate/Banana Stacks:

1 pint Whipping Cream
2 – 3 tbsp. Mascarpone Cheese (optional)
Dulce de Leche (at least half, or more, prepared above)
Chocolate Brownies or Cookies
Banana — Sliced

Whip the Cream till fully whipped; carefully fold in the Mascarpone (if using). Add (drizzle) the Dulce de Leche (desired amount) — Carefully fold in to Whipped Cream.

Apply to desired Chocolate pieces — Layer Brownies (or Cookies) with Banana slice, then prepared Cream; repeat. Top with dollop of Cream and Banana Slice.

Can be used as filling to make Chocolate Cake Roll….
