Chocolate-Cream Cheese Cup Cakes:
Super delicious, easy to make Cup Cakes — A chocolate cake mixture, with blops of cream cheese-with-chocolate chips. No frosting needed — Perfect any time, perfect for travel food.
Also known as ‘Wacky Cake’ Cup Cakes. ‘Wacky’, because the Chocolate Cake recipe involves mixing the dry ingredients, then creating three depressions, and adding a separate liquid to each ‘well’ — Vanilla, Vinegar, Oil. Then adding a cup of water to the entire bowl — And mixing. A ‘wacky’ way to make a cake — But it has ALWAYS worked for me. With (or without) the Cream Cheese blops — These are always enjoyable / delicious!!
Ingredients / Prep:
Cream Cheese Mixture:
8 oz. Cream Cheese, softened
1/3 cup Sugar
6 oz. Chocolate Chips
Mix together Cream Cheese, Egg and Sugar — Mix in Chocolate Chips — Set aside.
Chocolate Cake Mixture:
1-1/2 cup sifted Flour
1 cup Sugar
3 tbsp. Baking Cocoa (I use Dutch-Process)
1/4 tsp. Salt
1/2 tsp. Baking Soda
1 tsp. Vanilla
1 tbsp. Vinegar
6 tbsp. Oil (I prefer Peanut Oil)
1 cup Water (cool or cold)
Instructions / Assembly:
Prepare 18 cupcake cups — Foil liners work best.
Mix dry ingredients together in mixing bowl. Make three holes in dry mixture — Place Vanilla, Vinegar, Oil SEPARATELY in each depression. Quickly cover with cold water — Beat till thoroughly mixed.
Pour into 18 cupcake cups — 1/2 full. Drop blops of Cream Cheese Mixture onto each (about a spoonful each) — DO NOT MIX!! Sprinkle with Sugar and/or chopped Nuts. Bake 30-35 minutes at 350 degrees — Enjoy.
