Apple Creme Dessert:
A Scandinavian dessert — Creamy, just-right fruity, simple but elegant. Recipe calls for spiced rum (with the apples) — I used Apple Jack instead (also, fresh nutmeg). And for the whipped cream, I whipped in a bit of Mascarpone Cheese.
Once assembled, I drizzled a spoonful of maple syrup — A final bit of heaven. Recipe adapted from Sweet Paul Magazine.
Ingredients / Prep:
3 sweet Apples — Peeled, chopped
1/4 cup Sugar
1 tsp. Vanilla
1/3 cup spiced Rum
1/4 cup Water
8 slices good quality White Bread
2 tbsp. Butter
2 tbsp. Sugar
1/2 tsp. Cinnamon
1 cup heavy Cream — Whipped
Optional — Maple Syrup
Instructions / Assembly:
Peel the apples and chop into small cubes. Place them in a saucepan with sugar, vanilla, rum and water. Let the mixture simmer until the apples start to soften and most of the liquid is gone. Cool.
Place the bread on a baking rack and toast them dry at 300F until they are completely dried, (20 – 30 minutes). Break them up and place in a blender. Whizz until broken up but not pulverized, leave a few chunky bits. Melt the butter in a pan and add the bread crumbs, sugar and cinnamon. Stir until toasted to golden. Cool.
To assemble, start with a layer of apples, then whipped cream then bread crumbs. Repeat layers — Finish off with a layer of bread crumbs. Serve cold — Drizzle each with spoonful of Maple Syrup.
