Lemon Loaf Cake (with Blueberries):
I hope everyone is having a wonderful summer!! I’ve been hosting several batches of out-of-town guests — Enjoying visits with special friends. And that means a bit of cooking, and more cooking, and even trying new recipes. This is my latest new recipe….
Several years ago, I was on a quest. I was trying to find a recipe for an easy, just-right tasty, moist Lemon (loaf-size) Cake. I tried several different recipes — They were all failures. Some recipes used butter; some called for yogurt and oil. I tried different whisks, different beaters, different pans. They all failed — Mostly they turned out like concrete; dense, concrete bricks. It was baffling!! Like a Glaze Recipe that never works on a pot. I finally gave up — And consoled myself with, what else, lemonade.
But recently, as if the Lemon-Cake Goddess finally answered my prayer — I stumbled on one more recipe. I instantly recognized a few ingredients/instructions that were different. I decided to give it one more try. At the same time, feeling quite reckless — I decided that I would add a few scrumptious blueberries. And yes!! FINALLY — Lemon Cake Success! Easy to make, light, moist, yummy — And a delightful summer combination with tasty blueberries!
The Food — Lemon Loaf Cake:
The recipe I finally found included the usual flour and baking powder, also eggs, sugar and lemon zest. But significantly different from previous (many previous) recipes, it called for less oil (vegetable oil, NOT canola oil), and whole-milk yogurt (Greek whole-milk yogurt). I mixed it all (carefully) with just a whisk and spatula and plopped the batter into a baking pan. Finally, I added some perfectly chosen blueberries and gently smooshed and smoothed them into the top of the loaf. I placed it in the oven for baking.
And finally — Success!! My Lemon Cake was light and moist, and so very lemon-yummy. I’ve already made it several times — Because I had to test for reliability. And because I still had plenty of blueberries. I’ve finally found my just-right Lemon Cake. Recipe included on my Recipes Page.

In celebration of my (finally) successful Lemon Cake — I chose a happy new Platter made by Minnesota Artist, Matt Krousey. Stoneware, slips with wax-resist design, soda fired.
I like the not-perfectly-square shape. I definitely enjoy the squizzly lines and designs that he creates with wax-resist — Suggesting writing? Or barbed wire? A totally pleasing, and quietly dramatic presentation for my (FINALLY) Lemon Loaf Cake with Blueberries!!
