More St. Croix Goodies!
Yes — FINALLY Spring has arrived! Finally warmer weather. Finally, leafy buds on the trees. Finally, our springtime migrating birds. After such a brutally cold winter, spring has been very hesitant, very start-and-stop. But things are looking green and ‘fluffy’, and feeling like SPRING.
And with ‘warmer’ weather, husband and I got around to our first grilling of the season. I’ve been dying to try a batch of Hot-Smoked Salmon. Brined, dried, then slowly hot-smoked right on the grill. And then, a perfect presentation on one of the pots (a Simon Levin Tray) that I recently picked up at the St. Croix Pottery Tour. I guess it’s finally Mid-May Spring.
The Food — Hot-Smoked Salmon (with Mango Chutney):
I first tried this smoking technique last autumn, preparing Smoked Salmon as an appetizer. WOW — It was easy, and the the Salmon was fantastic! I’ve been wanting to try it again. Hot-smoking actually calls for a stove-top smoker (yes, they exist; try Amazon). But instead, we used our Weber Grill with plenty of pre-soaked wood chips.
The technique involves marinating (for only 1 hour) in a soy/salt/sugar brine. Then pat dry, and refrigerate on an open rack for 12 hours (overnight?). Then we slow-grilled in the Weber (in the center, NOT over open flame) with plenty of smoking chips. Amazing — The Salmon is ‘cooked’ with the most amazing, velvety texture. Allow to cool before serving — Allow the flavors to meld a bit.
The results — Heaven. Moist, rich, silky/smokey Salmon. Accompanied with a sweet/tangy contrasting Honeyed Mango Chutney. Serve as either an Appetizer or an Entree (with Soba Noodles?). Recipe on my Recipes Page.

I’m sharing my Smoked Salmon on another favorite piece I acquired during the St. Croix Pottery Tour. An awesome Three-Sided (footed) Tray made by Simon Levin, of Wisconsin. Thick, chunky, minimalist form — Gorgeous wood fired! Stunning fire and ash surface statements. I’m thrilled about finding this Tray and adding it to my life. And the small, simple (also wood fired) Vase, is made by Simon, as well.
