Wow — We’ve really been experiencing a longer-than-usual Autumn. So many leaves still on the trees — Some still green, but so many creating a gorgeous golden world.
And then, last night, the first snowfall — Wet, sloppy, slushy snow. The first true reminder that Autumn must end, and a Minnesota Winter will be returning. Of course, we still have so many golden leaves….
What could be better with a first snowfall — A tasty soup!! A ‘good-stuff’ soup — In a special new bowl….
The Food — Soup with Potato, Carrot, Kale & Parmesan:
I’m calling this a ‘Good-Stuff’ Soup — Full of good, healthy stuff (Kale alert). Easy and tasty; comfort food. I sauteed onion and garlic, added plenty of chicken broth, then chopped carrot and potato, rosemary and bay leaf. After simmering for a bit, I added white beans and chopped kale. Simmered a bit more and served with plenty of Parmesan cheese! Yummy — It all worked; and the kale provides a perfect bit of texture. Note — If I make this again, I’ll probably add a bit of smokey bacon.
The Pottery — Bowl by Steve Rolf:
I chose a lovely bowl I recently acquired — Made by Wisconsin Artist, Steve Rolf. Dark smooth stoneware, gently faceted, soft, satin glaze. Lovely! And perfect for a hearty (healthy), colorful soup on a first snowy evening.
